Kale Basil Pesto

* This recipe makes about 3-4 cups of pesto*
Ingredients:
1 bunch Kale
1 bunch Basil
Juice of 1 whole lemon
1 whole garlic head (peeled)
1 1/2 cup Parmesan cheese
2 cups olive oil
salt & pepper to taste
- Prep all the ingredients. Rinse Kale and Basil separately. Pat dry Basil and set aside.
- I cut off the excess Kale stalk/stem and used the kale leaves only.
- Put Kale in a pot of boiling water and let it simmer for about 5-7 minutes until wilted.
-Drain thoroughly. Make sure to remove excess water.
- In a food processor/blender, put in kale, basil, garlic,lemon juice, and salt & pepper. Pulse.
- Pour/drizzle olive oil while blending.
- Pulse/blend until pesto is fully incorporated and smooth.
- Add Parmesan cheese and mix.
*Add more salt& pepper/Parmesan cheese if you want to.*
And there you have it, your own Kale Basil Pesto!
*Store pesto in seal tight containers and make sure to put it in the fridge*
